So....what's with the name?
...Well this all started with Mildred Goodridge, also affectionately known as Millie or Granny.Why pay homage to her?
In 1925 Millie was born on the British island colony of Barbados. A spunky and creative spirit she was, but unfortunately she never had much of a childhood. At the tender age of eight she was sent to live on Guinea Plantation (St. Phillip) where she worked for 2 shillings a week. There she learned to clean and iron. When she was 15 she moved to Carrington Village with an aunt where she continued ironing and cleaning for money, but more importantly, it was there Millie honed her exceptional baking skills and found her passion for cooking in general.

Millie is now married to the tall and handsome Alphonzo Goodridge. They have 7 children and live a modest life, but they have their own home on a good plot of land in Flag Staff St. Michael-- she doesn't have to work quite so hard anymore. But disaster strikes in 1967 when her Alphonzo is critically injured in a car accident and later dies from pneumonia in the hospital.
So what did Millie do?
She dropped her job as a a night nurse and took a day job as a maid and she baked and baked and baked and sold and sold and sold in whatever free time she had. Soon Millie made a name for herself among the residents of Flag Staff, Highgate Gardens and the Ministry of Education (Jemmott's Lane), where she was also employed until her retirement.
Unfortunately Millie no longer bakes her sweet treats. The mean and selfish disease of Alzheimer's has taken away her capacity to remember how many cups of flour she's put into the batter or how many pounds of butter are needed to make her signature Coconut Drops. However her legacy lives on in her children and grandchildren who share her passion for all things food.
And this is the meaning of "Pie in the Sky"....
In other words, it is our way of saying: despite her quickly fading memory, and the fact that some day she will leave us, her creativity, commitment to hard work and her entrepreneurial spirit will forever live on in our hearts and minds.
I feel blessed to read this and to know Mildred, some of her children and grand children.
